Toddler Eats: Lemon & Herb Chicken Nuggets

Chicken nuggets seem to be a firm favourite with children and that is no different in my house. Unfortunately some shop-bought nuggets seem to contain lots of unwanted ingredients, are pretty salty and tend to use less desirable cuts of chicken meat. So I make my own instead. They are less convenient than taking a bag of pre-made nuggets form the freezer but they don’t take long at all and it’s reassuring to know what is going into you little one’s tummy! The lemon and herb seasoning make these extra yummy and are a good way of introducing a different flavour to children.

Serves 4 (2 children & 2 adults)
Ingredients:

  • 3 skinless chicken breasts
  • 1 egg, whisked
  • 1 cup plain flour
  • 1 cup crushed cornflakes
  • 1 cup breadcrumbs
  • 1.5 tsp dried mixed herbs
  • 1.5 tbsp lemon juice
  • a grinding of pepper

Method:
1. Preheat your oven to 200°C and grease a baking tray.
2. Cut the chicken breasts into chunks.
3. In a bowl combine the breadcrumbs, crushed cornflakes, herbs and lemon juice, mix well.
4. Make up two more bowls – one with the flour and one with the egg. You should now have three bowls, one with egg, one with flour and one with the cornflake mix.
5. Dip each chicken chunk into the flour and coat well. Then dip each chunk into the egg. Finally cover the chunks in the cornflake mixture, making sure they are well coated.
6. Place the nuggets on a baking tray and cook in the preheated oven for around 20 minutes or until cooked all the way through.
7. Enjoy! I served ours with sweet potato wedges, peas and sweetcorn along with a dollop of ketchup for dipping!
