Sugar Free Blueberry, Banana and Oat Muffins

Blueberry Banana Oat Muffins

Cook up a batch of these sugar-free yet oh-so-good Blueberry Muffins.

These sugar-free muffins are perfect for toddlers and in particular, babies who are weaning. They are fluffy and filling and the natural sweetness of the banana and blueberries is enough to make little taste buds happy. They are the perfect treat for Breakfast or snack time!

As I explained in my Strawberries and Cream Smoothie Pops recipe, I used a Tesco Orchard voucher to purchase the blueberries. We nibbled them throughout cooking and they are huge berries; so sweet and juicy!

The muffins were a huge hit in our household, myself and my Husband included. We will be making some more later in the week!

Makes: 12 muffins

You will need:

  • 340g self raising flour
  • 25g oats (plus an extra handful for sprinkling before baking)
  • 1 banana, mashed
  • 1 egg, whisked
  • 125ml milk
  • 3 tbsp Greek or natural yogurt
  • 60ml vegetable oil
  • 150g blueberries
  1. Preheat the oven to 180C/350F and line a muffin tin with 12 cases.
  2. Add the flour and oats into a mixing bowl and stir together.DSC_0353
  3. Add in the rest of the ingredients and mix well until it is all combined into a sticky dough.
  4. Add in the blueberries and gently fold them into the dough.DSC_0355
  5. Divide the mixture between the muffin cases and sprinkle the spare oats over the top of the muffins.
  6. Bake in the oven for 15-20 minutes until they are firm and golden brown.
  7. Allow to cool completely on a wire rack. Enjoy!

I love this no-faff recipe, it’d be a great one to do with children as it is simply a case of measuring then mixing. And, as you can see they certainly enjoyed tasting them!
