Wholegrain Easter Biscuit Recipe

I wanted to make some Easter themed biscuits with Sophia this year as we have some rather lovely Easter biscuit cutters that I’m desperate to use. Traditionally Easter biscuits just have currants in but I wanted to experiment with almond flavour because it reminds me of traditional Easter Simnel cake. So I tampered about with some recipes and came up with my Easter biscuit recipe! And to make things a little healthier and toddler-friendly I have used half white flour and half wholemeal.

It is a great recipe to get little ones involved with – the measuring, rolling, cutting and of course decorating them! They would make excellent gifts to give to friends and family too!

Makes around 28 biscuits.

Ingredients: DSC_0051

  • 200g butter, diced and at room temperature
  • 200g caster sugar
  • 1 egg
  • 100g ground almonds
  • 150g wholegrain flour
  • 200g plain flour
  • 85g mixed dried fruit
  • 3 tbsp lemon juice

 

Method:

  1. Cream together the butter and sugar until fluffy and pale in colour.
  2. Add in the egg and mix until combined.
  3. Add the dried fruit and mix together.
  4. Combine the flours and ground almonds into one bowl and mix. Gradually add a couple of spoons at a time to the wet mixture.
  5. Halfway through mixing the wet and dry ingredients add the lemon juice and continue to add the dry ingredients.
  6. When all the ingredients are combined into a ball, wrap in cling film and chill in the fridge for around half an hour.
  7. Once chilled preheat the oven to 180 degrees and grease your baking trays.
  8. Roll out the dough on a floured surface until it’s around the thickness of a £1 coin. Cut out the biscuits out with cutters of your choice and place on the baking tray. Make sure they’re spread a little apart to stop them from clumping into one.
  9. Transfer to the oven. Bake for around 15 minutes but keep a close eye on them, checking every so often to stop them from burning.
  10. When golden brown and cooked through allow to cool on a cooling rack.
  11. When fully cool decorate however you like! I used icing sugar made up with lemon juice for an extra zing and I used pastel coloured hundreds and thousands but you could get as creative as you like!
